Beef Fajitas
 
  • 1 pound skirt or flank steak
  • 1/3 cup fresh lime-juice
  • 1/3 cup olive oil
  • 3 large cloves garlic, minced
  • 1 1/2 teaspoons ground cumin
  • 2 teaspoons cracked pepper
  • 1 medium onion, sliced
  • 1 tablespoon butter
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 8 (8-inch) flour tortillas
  • Guacamole
 
Combine lime juice and next 4 ingredients in a small bowl, stirring well. Place steaks in a ziplock bag and add marinade. Refrigerate for 8 hours.
 
Preheat grill on MEDIUM-HIGH. Grill steaks for 5-7 minutes on each side, basting with marinade. Place sliced onion, peppers and butter on a piece of heavy duty aluminum foil, wrap tightly and grill for 5 minutes.
 
Wrap tortillas in aluminum foil, and bake at 325 degrees for 10-15 minutes.
 
Slice steaks and combine with onions and peppers on the tortillas.
