- 1 pound skirt or flank steak
- 1/3 cup fresh lime-juice
- 1/3 cup olive oil
- 3 large cloves garlic, minced
- 1 1/2 teaspoons ground cumin
- 2 teaspoons cracked pepper
- 1 medium onion, sliced
- 1 tablespoon butter
- 1 red pepper, sliced
- 1 green pepper, sliced
- 8 (8-inch) flour tortillas
- Guacamole

| Combine lime juice and next 4 ingredients in a small bowl, stirring well. Place steaks in a ziplock bag and add marinade. Refrigerate for 8 hours. |

| Preheat grill on MEDIUM-HIGH. Grill steaks for 5-7 minutes on each side, basting with marinade. Place sliced onion, peppers and butter on a piece of heavy duty aluminum foil, wrap tightly and grill for 5 minutes. |

| Wrap tortillas in aluminum foil, and bake at 325 degrees for 10-15 minutes. |
| |
| Slice steaks and combine with onions and peppers on the tortillas. |
