- 8 lb. pork tenderloin
- 1/2 cup water
- 3 tablespoons lemon juice
- 1 clove garlic, crushed
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon chopped parsley
- 1/2 stick butter

| Combine above ingredients in a small sauce pan and bring to a boil. Reduce heat and let simmer for 5 minutes. |

| Turn rotisserie to MEDIUM-HIGH. Place pork roast on rotisserie and cook for 1 1/2 -2 hours or until the internal temperature reaches 160 degrees with a meat thermometer. Use the marinade to baste the pork roast every 15-20 minutes to ensure tenderness. |
