Pork Tenderloin Roast
 
  • 8 lb. pork tenderloin
  • 1/2 cup water
  • 3 tablespoons lemon juice
  • 1 clove garlic, crushed
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon chopped parsley
  • 1/2 stick butter
 
Combine above ingredients in a small sauce pan and bring to a boil. Reduce heat and let simmer for 5 minutes.
 
Turn rotisserie to MEDIUM-HIGH. Place pork roast on rotisserie and cook for 1 1/2 -2 hours or until the internal temperature reaches 160 degrees with a meat thermometer. Use the marinade to baste the pork roast every 15-20 minutes to ensure tenderness.
